Physicochemical and antimicrobial properties of cassava starch films with ferulic or cinnamic acid

Abstract Plasticised cassava starch films with 1–2% ferulic or cinnamic acid were obtained by melt blending and compression moulding. Partial losses (about 40%) of the more thermo-sensitive occurred during processing. Incorporation phenolic acids did not provoke remarkable changes in oxygen water vapour permeability films, but these became less soluble (13–25% reduction), extensible resistant to break, especially highest concentration acid. Films 2% either effectively inhibited growth E. coli L. innocua tests carried out culture medium; being effective than sensitive coli; a Log CFU reduction, respect control, higher 6 was for films. The both strains also chicken breast (log reduction>2) In fresh-cut melon, significantly acid, lower inhibition melon observed.
